Cask × Morita Soy Sauce Food Exploration Seminar: Taking the obvious seriously. What does it mean to make soy sauce with care?

- With the themes of learning, discovery, and deliciousness, we will hold a food exploration seminar that will allow participants to experience the essence of food with all five senses, while considering the producers and the environment and facing the act of eating. We will invite Morita Kohei of Morita Soy Sauce as the lecturer, who will talk about Morita Soy Sauce's commitment to its craft, the terroir of Izumo, and future initiatives. After the seminar, we will serve a limited-time special lunch using Morita Soy Sauce seasonings and other ingredients.

Morita Soy Sauce is a long-established company with over 100 years of history in Okuizumo, Shimane Prefecture. Its soy sauce is made with care and sincerity, aiming to create a product that brings out the natural flavor of the ingredients, a taste that people would want their children to continue eating. Preserving traditional methods, the company uses carefully selected domestic ingredients, and handles everything from koji making to aging in-house. The company makes its dashi stock by boiling domestic bonito flakes, kelp, and dried sardines in its own factory, and also uses safe domestic ingredients for seasonings and citrus juice.
